*Basil chiffonade: Start with a fresh bunch of basil with good-sized crisp, shiny green leaves. Wash the herb if there is any grit at all and then pat dry with a terry or paper towel. Completely remove the leaves from the stems. Take 4 or so leaves and pile 1 leaf on top of another, the largest leaf on the bottom. Roll the leaf wad into a tight roll, starting from side to side. With a very sharp knife, carefully slice the leaf wad into 1/16- to 1/8-inch pieces, as if you were cutting a jelly roll. The result is a pile of basil "strips" which add wonderful flavor, texture, and color to your sauces. |
Chef Bertrand Chemel is pleased to announce the appointment of Stefano Cappelli as the new Sommelier of 2941 Restaurant. A native of Florence, Italy, Cappelli received his Sommelier Diploma from the International Sommelier Guild in Arlington, Virginia and most recently served as Wine Director for The Palm restaurant in Washington, DC. Cappelli’s resume also includes Wine Program Manager at Café Milano and Filomena Restaurant, both located in the nation’s capital, and XO Wine Bar and Retail in his hometown of Florence. Cappelli is fluent in Italian, English, and French and is currently working on mastering his next romance language: Spanish. This is a small wine dinner for 12 served in our Chef’s Tasting Room. The evening includes a 5-course “off the menu” dinner created around a few bottles of delightful wine.
